Hatched, a fast-casual brunch concept from the owners of the Roost & Roast restaurant, has cracked its first eggs in Palo Alto.
The restaurant opened Tuesday at Town & Country Village shopping center with an egg-forward sandwich menu that includes the obligatory scrambled eggs, cheddar, caramelized onions, arugula and aioli on a bun (called the BFF); the BEC, with bacon, eggs and cheddar; the Ono, which is fried chicken, fried egg and sriracha aioli; and versions featuring pork belly or avocado or shiitake mushrooms.

The owners are the brothers Poon — chef Brandon, Craighton and Clifton — who test-marketed the concept at Kurated Kitchens, their Sunnyvale food hall where they try out ideas.
Besides the egg sandwiches, Hatched offers three meal-size salads — Miso Caesar, Avocado Chop and Arugula & Parm — along with avocado toast, a smash burger and both classic and garlic parmesan tater tots.

The beverage list is massive, with nearly 20 matcha and espresso lattes, plus iced green tea selections and iced Vietnamese coffee.
Hatched is located at the back corner of Town & Country, near the brothers’ Roost & Roast, a fast-casual, Thai-inspired chicken restaurant.
